Roasted Corn & Black Bean Salad
Fresh corn cut off the cob is roasted in olive oil and combined with roasted red peppers, cilantro, red onion, black beans and avocado and tossed with a light lime dressing with a hint of cumin
Orzo with Roasted Vegetables
Orzo Pasta with Roasted eggplant, Red & Yellow Bell Peppers, Red Onions, Pine Nuts and Feta Cheese in a lemon vinaigrette.
Hummus with Roasted Peppers and a hint of Cumin
Serve on a bed of lettuce with Pita Wedges
Italian Gratin
Mushrooms, spinach, tomatoes & fresh basil layered with Orzo and Parmesan.
Vegetarian Pozole
This version calls for hominy and features chilies, delicate squash, pepper tomatoes and fresh herbs. This is Wrapped up in tortillas with diced avocado, cilantro, cheese and lettuce!
Black Bean and cilantro pesto Lasagna
Rich with cheese and marinara
Butternut Squash & Sage Orzo
Chunks of fresh butternut squash sautéed with onions, fresh sage, white wine, vegetable broth & orzo.
Couscous and Quinoa Stuffed Peppers
Red bell peppers stuffed with couscous, quinoa in a delicious tomato sauce!
Italian Stuffed Shells
A mixture of ricotta and fresh spinach stuffed into shells, topped with pine nuts and parmesan.
Lasagna Florentine
Fresh baby spinach, layered with 3 cheeses and a slow simmered marinara.
Lentil Tamale Pie
A traditional favorite without the meat!
Minestrone Soup
Italian classic, loaded with fresh veggies and made hearty with white beans.
Mock Crab Cakes
Yellow squash seasoned as you would real crab cakes, served with lemon, garlic aioli.

Red bell peppers stufffed with brown rice, mushrooms, shallots, tomatoes, almonds, sherry and seasonings, baked topped with parmesan cheese.
Spanakopita
Also known as "Greek spinach pie", made with feta, parmesan and ricotta or cottage cheeses blended with baby spinach, grated onion and a hint of nutmeg, and baked in a beautiful pastry crust until golden brown. A client favourite!

A creamy colourful delicious dish, soothing and filling.
Enchilada Casserole
The inclusion of tempeh adds a good measure of protein to this spicy casserole, along with black beans, green chilis, jalepeno pepper, black olives, cheddar cheese and enchilada
